That’s right: in cake. From rich chocolate to vibrant strawberry, gin can complement an array of cake varieties. With this in mind, let’s explore some easy gin cake recipes that showcase our renowned Thirlings Dry Gin.

Gin and tonic drizzle cake

This gin cake recipe represents the spirit’s flavour in its purest form. It’s the perfect gin cake idea for a dinner party or summer lunch.

Cake ingredients

  • 225g all-purpose flour
  • 225g caster sugar
  • 225g unsalted butter, softened
  • 4 large eggs
  • 3 tbsp Thirlings Dry Gin
  • 3 tbsp premium tonic water
  • Zest of 1 lime
  • 1 tsp baking powder

Glaze ingredients

  • 150g powdered sugar
  • 2 tbsp premium tonic water
  • 2 tbsp Thirlings Dry Gin
  • Juice of 1 lime


  • Preheat your oven to 180°C and grease a loaf pan.
  • Cream together butter and sugar until light and fluffy, then beat in the eggs one at a time.
  • Stir in your Thirlings Dry Gin, premium tonic water, and lime zest.
  • Sift together flour and baking powder, then fold into the wet ingredients until just combined.
  • Pour the batter into the prepared pan and bake for 45-50 minutes or until a skewer inserted into the centre comes out clean.
  • Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  • For the glaze, mix powdered sugar with gin, tonic water, and lime juice until smooth. Drizzle over the cooled cake.

Gin-drip birthday cake

Cake ingredients

  • 350g all-purpose flour
  • 350g caster sugar
  • 350g unsalted butter, softened
  • 6 eggs
  • 4 tbsp Thirlings Dry Gin
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Frosting ingredients

  • 500g powdered sugar
  • 250g unsalted butter, softened
  • 3 tbsp Thirlings Dry Gin

Gin-drip ingredients

  • 100g white chocolate
  • 50ml heavy cream
  • 2 tbsp Thirlings Dry Gin


  • Preheat your oven to 180°C.
  • Grease and flour three 8-inch cake pans.
  • Cream the butter and sugar until fluffy. Add eggs one at a time, then mix in your gin and vanilla extract.
  • Sift flour and baking powder, and fold into the wet ingredients.
  • Divide batter among the pans and bake for 25-30 minutes. Cool on a wire rack.
  • For the frosting, beat butter until creamy. Gradually add powdered sugar and Thirlings Dry Gin until smooth.
  • Stack and frost the cake layers.
  • For the gin drip, heat cream until just simmering, then pour over white chocolate. Stir until smooth, then mix in the gin. Cool slightly, then spoon the mixture into the middle of the top layer. 
  • Finally, use a spoon to push the mixture over the edges, creating a drip effect around the cake.

Lemon drizzle gin cake

Similar to the traditional lime garnish, lemon’s zesty, citrus flavour is the perfect gin companion. This simple lemon gin cake recipe invites you to poke delicate holes into the sponge to immerse the lemon syrup into every bite.

Cake ingredients

  • 225g all-purpose flour
  • 225g caster sugar
  • 225g unsalted butter, softened
  • 4 eggs
  • 4 tbsp Thirlings Dry Gin
  • Zest and juice of 2 lemons
  • 1 tsp baking powder

Drizzle ingredients

  • 100g granulated sugar
  • Juice of 1 lemon
  • 3 tbsp Thirlings Dry Gin


  • Preheat the oven to 180°C and line a loaf pan with parchment.
  • Cream the butter and sugar. Add eggs one at a time, followed by the lemon zest, juice, and gin.
  • Fold in sifted flour and baking powder. 
  • Pour into the pan and bake for 45-50 minutes.
  • For the drizzle, mix lemon juice, gin, and sugar. Poke holes in the warm cake and pour over the drizzle. 
  • Let your gin cake cool in the pan before serving.

Chocolate gin cake

  • Preheat the oven to 180°C and grease a round cake pan.
  • Cream butter and sugar, then add eggs one at a time.
  • Stir in melted chocolate and Thirlings Dry Gin.
  • Sift in flour and baking powder, and fold until combined.
  • Pour into the cake pan and bake for about 45 minutes.
  • Cool in the pan, then serve when ready.
